I am Colonel Haseen Arif Khan (Retd) served in Army Service Corps After doing my long catering course from DIHM , Delhi in 2005 - 2006 , I have a privilege of serving in CAT A/B establishment viz CME Pune , ASC Centre (North) at Gaya , first catering officer of Officer training Academy Gaya , OC faculty of Catering Training, ASC Centre & College Bangaluru and last posting as Catering Officer at ASC Centre North Bangaluru. ASC centre provided me the opportunity to impart training to chef and stewards of all Indian army. Here I realised that there was requirement of a hand book which should deal with all aspects of food production and service as well as act as a ready reckoner.
